Expressive and layered on the nose with red fruits, spice and a savoury, gamey character that gives it real soul. Dark berry flavours laced with mineral, mint, earth, twiggy herbs, sweet spices and suede leather. The palate is long and bright, backed by fine chalky tannins that beg for a seat at the dinner table.

UNUM is Nick Spencer's clever reimagining of the classic GSM blend — swapping Shiraz for Sangiovese and Malbec to move away from jamminess and into something vibrant, structural and deeply savoury. Each variety fermented separately and pressed to old puncheons and clay amphoras, keeping the fruit pure and the tannins fine. Each variety picked and fermented separately, 100% de-stemmed, on skins for 14 days. Pressed to old puncheons and clay amphoras to build texture without adding oak flavour. Matured 12 months before bottling.
