Tasting Notes

Pale straw in colour with unrelenting fine beads. The nose offers fresh lemon pith, brioche and barley sugar, leading to a voluminous, citrus-driven palate with the sensation of freshly iced pastries. Crisp, lively and wonderfully moreish.

Winemaking

A blend of Chardonnay and Pinot Noir sourced from the Riverina. Base wines are made separately before blending, then undergo a secondary fermentation in tank (Charmat method) to develop fine, persistent bubbles and add weight and creamy texture to the finished wine.

Cuisine Pairing

Canapés & oysters: fresh oysters, prawn cocktail. Light seafood: smoked trout, smoked salmon, deli meats. Fine bubbles and bright acid cut through richness and salinity.

Cellaring & Serving

Drink now, or cellar up to 2–3 years. Serve well chilled at 3–7°C.
