La Chablisienne's La Pierrelée is the benchmark expression of classic Chablis — everything you want from this iconic Burgundian appellation in one clean, precise glass. It pours a pale straw with a greenish glint. The nose is immediately evocative of Chablis: flint, chalk, oyster shell and lemon zest, with delicate jasmine and lime leaf weaving through. On the palate it is crisp and refreshingly dry with a mineral salinity that calls to mind the Kimmeridgian limestone soils from which it springs. Green apple, lemon peel and a subtle herbaceous note complete the picture. A clean, satisfying finish of medium length. Outstanding with seafood.
